BEETROOT ROASTING ADVICE

Roasting intensifies the earthy, sweet flavour.
You can roast the beetroot well in advance of when you need them (even a day before).
Don’t peel, cut the green tops down to the beetroot, but don’t cut the beetroot itself. Leave the long, tail-like part on.
Preheat oven to 200ºC
Put the whole beetroots into an ovenproof dish, cover & bake for 60-90 minutes or until the beetroot is very tender.
Once roasted, leave them unpeeled in the fridge.
You can reheat them without harming the flavour, or the texture.
Don’t peel them until you are ready to use them.
Make a salad with them, eat them with your favourite meal, or put them in a sandwich - Beetroot is versatile, healthy, & delicious!
